I'm not vegan, just vegetarian. Although I will only have ice-cream, milk, yogurts and margarine that is made from soya, and some meals are entirely vegan. Yesterday was one such occasion. For my main I had:

Nut cutlets, with
Roasted butternut squash, carrots, red pepper, onions and garlic, and
New potatoes
Topped with vegetable stock

Followed by:

Poached pears, with
Rich dark chocolate (vegan) ice-cream

Yum! It was gorgeous :)
